Beetle Bean Salad with Bacon

For the beetle bean salad with bacon, toast the bacon in a pan until crispy. Peel the eggs and cut them into quarters. Cut the bell bell pepper into fine strips.

Mix beans with chopped shallots and bell bell pepper strips. Season with pumpkin seed oil, apple cider vinegar, salt and pepper to taste.
