Place meat in a pan and cover with water. Simmer gently over low heat for 8-10 minutes until almost cooked. Remove, cool, and then cut into fine slices.
2. peel pawpaw and cut into long strips. Carefully mix with cilantro, chilies, mint, vinegar, lime juice, fish sauce and sugar.
3.Arrange pawpaw mixture on a serving platter and arrange chicken on top. Sprinkle with peanuts and bring to table on the spot.
