Cut Emmentaler into sticks and lard the beef densely with it.

Peel the carrots and cut into slices, crumble the bread.

Heat clarified butter in a roasting pan, fry carrot slices, half of the bread crumbs and peppercorns briefly in it. Season the beef with salt and coat it thickly with mustard. Put it in the roasting pan and pour beef broth over it. Cover and cook in a heated oven at 175 degrees for about 120 minutes, basting from time to time.

At the end of the cooking time, remove the meat and keep warm. Refine the sauce with sour whipped cream and the remaining bread crumbs.

Serve with boiled potatoes and savoy cabbage.

Tip: Instead of clarified butter, you can also use butter in most cases.
