After washing, dab the fillets (without skin and bones), salt and pepper them.

Beat one egg.

Prepare a container each with flour, beaten egg and breadcrumbs and turn the fillets one by one first in egg, then in flour and then in breadcrumbs.

Fry out in a pan with hot fat, drain on kitchen paper and serve.
