Herb marinade (for 500 g meat) thyme, fresh fresh h marjoram, fresh fresh parsley, fresh fresh.
Soak the steak in the herb marinade for about 2 hours. In the meantime, rinse the potatoes and wrap them in aluminum foil. Bake for about 60 minutes on the broiler in a 180 °C oven. Drain the meat. Heat 2 tablespoons of sieved herb marinade in a frying pan. Sear the steak for 2 minutes on each side. Then fry at reduced temperature for another 5 to 6 minutes on each side. Remove and keep warm. Clean tomatoes and onions, fry briefly in remaining fat, season with salt and pepper to taste and cook. Bring the steak to the table in the colorful vegetable mixture. Mix the crème fraîche with the finely chopped herbs, season mildly with salt and pepper. Open the foil around the potatoes and pour the herb sauce over them.
