For the meat loaf with potato salad, wash potatoes, boil in hot water, with the lid closed for about 20 minutes until done. Drain the water, rinse the potatoes, peel and leave to cool.
Peel and finely dice the onions. Cut bacon into small cubes as well. Cut potatoes into not too thin slices. Heat 2 tablespoons of oil in a pan and fry the bacon until crispy. Add half of the onions and sauté briefly.
Add vinegar, water and the soup powder and bring to a boil. Simmer on low heat for 2 minutes and season with salt and pepper. Mix the hot liquid with the potatoes and let it simmer with the lid closed for at least an hour.
In the meantime, for the meat loaves, mix the minced meat, egg, remaining onion cubes, breadcrumbs and mustard, knead and season with salt and pepper. Form about 12 small meat loaves from the meat mixture.
Heat 1-2 tablespoons of oil in a frying pan. Fry the meat loafs in it for 10-12 minutes, turning several times.
Season the potato salad once more.
Serve the meat loafs with the potato salad.
