For the spinach and feta cheese patties, wash the spinach and toss briefly in hot olive oil until collapsed. Remove from the pan and let cool.

Then chop the spinach and season with salt and pepper. Add the feta cheese and the yolk and mix.

Now cut the puff pastry into squares and place a spoonful of spinach mixture on each half of the puff pastry – until everything is used up.

Now cover with the squares of the second puff pastry and roll up the ends. Brush with the egg and bake at 180 degrees convection oven for about 10 minutes.
