Instructions:

Stir well oil and all ingredients up to and including pepper, add meat, mix. Cover and marinate in the refrigerator for about one hour.

Sauce: roast bacon in a frying pan until crispy, remove and set aside. Toast bread cubes in same skillet until golden brown, remove, set aside.

Add clarified butter, heat, roast meat in portions for two minutes, remove, season with salt, set aside with lid closed. If necessary, add a little clarified butter, sauté mushrooms and silver onions for two minutes.

Add stock, bring to the boil, reduce heat, simmer gently for about five minutes. Add cornflour, stirring with a whisk, let it boil, reduce temperature. Add meat and bacon again, just until hot. Arrange venison strips, sprinkle with bread cubes.

Serve with: spaetzli
