Desalt the cod in water for 36 hours, renewing it a few times. Then drain, dab with a linen cloth, flour, and roast in enough olive oil. Drain. Pour the milk into a clay pot, place the fish on top, cover with “All-i-Oli”, sprinkle with sponge, add a little cinnamon and bake in the oven for two minutes.
