For the matcha madeleine, heat up the oven to 160°C. Line a madeleine mold, muffin tin or cake pan of your choice with muffin paper or butter and flour it.
Mix the dry ingredients such as almonds, flour, baking powder, sugar and matcha.
Melt the butter and let it cool slightly.
Beat the eggs and separate them. Lightly beat the egg whites and stir them into the dry ingredients. Finally, add in the butter and quickly mix everything together until smooth.
Fill the molds with the batter – do not overfill so that the molds do not overflow as they rise.
Bake the matcha madeleine for about 20 minutes, let cool and enjoy!
