For the parmesan fans, slice olives. Roll out puff pastry onto a floured work surface, cut out 10 cm diameter dough circles and make fan-shaped incisions.

Brush with beaten egg, season with salt and nutmeg powder and sprinkle with grated Parmesan.

Finally, cover with olive slices. Preheat oven at 200 degrees and bake for about 8-10 minutes until golden brown.

Remove the fans from the baking sheet while they are still hot. Serve warm or cold.
