(Traditional English dessert) Rinse the gooseberries, trim the stalk and flower base. Make a few min with water, sugar and cinnamon until soft. Crush with a hand mixer, put aside to cool. Whip the cream until stiff and perhaps sweeten with vanilla sugar. Gently mix fruit puree and whipped cream. Fill into stemmed glasses and sprinkle with brittle.
(Can also be made with vanilla pudding instead of whipped cream).
