Have fun preparing this mushroom dish!
Put the mushrooms in a large bowl. Pour enough boiling water over them so that they are covered. Set aside for 20 minutes.
Using a sharp knife, trim excess fat from the pork. Cut the pork into narrow strips.
Bring water to a boil in a large saucepan. Pour in the meat and do for 5 minutes.
Remove with a wok turner (or slotted spoon) and drain thoroughly on paper towels.
Heat the oil in a large preheated wok. Add the pork to the wok form and sauté for about 5 min.
Remove the mushrooms from the water and drain thoroughly. Cut into coarse pieces.
Add the mushrooms, onions and peppers to the wok and fry for 5 minutes.
Add the oyster sauce and cook for 2-3 minutes. Serve immediately.
If you prefer mushrooms cut into slices, use mushrooms with visible lamellae (e.g. chestnut mushrooms or field mushrooms).
