Cut salmon into sticks, season with salt and lime juice. Mix white bread crumbs with the sesame seeds. Coat salmon sticks in flour, egg and the breadcrumb-sesame seed mixture. Heat oil in a frying pan and fry the fish sticks in it until golden brown.
For the chive cream, stir all ingredients together.
Arrange fish sticks with chive cream on plates, garnish with lettuce and beet cubes.
