For the tomato sauce, generously cut out the stem end of the tomatoes. Put the tomatoes in a pot and mash them a little.
Cut the orange and yellow peppers in half, remove the seeds and the white part. Add to the tomatoes and add a little salt and pepper and a small amount of the hot chili.
Bring the mixture to a boil and simmer for about fifteen minutes, stirring frequently. When the tomatoes break down, pass everything through a whisk, then add the thyme sprigs to the resulting mass and let everything slowly boil down in a wide pot until the sauce is very thick, like ketchup.
Keep stirring and make sure that nothing burns. Now season the sauce with salt and pepper and remove the thyme stalks.
