For the zuccini strudel, dice the onion and zucchini and sauté in a little olive oil. Season with salt, pepper and the finely chopped garlic. Remove from heat and let cool slightly.
Cut the ham into small pieces. Stir the ham and the grated cheese into the zucchini mixture. Finally, stir in the egg.
Roll out the dough and coat it evenly with the mixture and roll it up into a strudel. Prick the strudel several times with a fork.
Brush the strudel with beaten egg to make it crispy. Bake the zuccini strudel at 180°C until golden brown.
