Tiramisu – without Egg

Mix the coffee with half of the Amaretto and half of the Marsala. (If you do not want alcohol, take a correspondingly increased mass of hearty sweetened espresso).

Spread a gratin dish (20 x 20 cm or similar) with biscuits, drizzle half of the coffee mixture over them. Whip the cream with sugar (and maybe cream stiffener), mix with the remaining alcohol (substitute a tiny bit of liquid vanilla extract), mascarpone and ricotta.

Beat until the mixture is very compact. Brush half of the cream on the cookies, put another layer of cookies and drizzle, brush the rest of the cream.

Allow to stand for at least 20 minutes. Sprinkle with chocolate flakes (or sifted cocoa powder), add amaretti to the table if desired.

Note: If the cream is prepared for a party, be sure to use cream stiffener and do not make the sponge cake too wet.
