Instructions:

For the wholemeal bread, first prepare the sourdough. To do this, mix all the ingredients and leave to rise for 12 hours in a warm place.

Put 150 g of this sourdough aside for the next baking.

Melt the yeast and honey in lukewarm water. Mix with the sourdough and the remaining ingredients to form a dough. Pour this dough into a greased loaf pan (35cm) and let it rise for another hour.

Bake the wholemeal bread in the oven preheated to 200°C, top and bottom heat, on the middle shelf, for 60 minutes. Then cover with foil and bake for another 30 minutes.
