For the vegetable soup with catfish, first wash the vegetables well. Cut the leek into thin rings and cut them into half circles. Peel the onion and chop it very finely. Cut the carrots and the bell bell pepper into pieces of about 1 cm.
Cut the fish fillet into pieces of about 1-2 cm. Heat the oil well in a soup pot, fry the vegetables well, add the fish cubes and fry them as well. Pour the vegetable soup over everything.
Let it simmer for about 30 minutes, add the pimento seeds and the bay leaves and let it cook. Meanwhile, also stir in the tomato paste and the caraway seeds.
