Mix the cream, sour cream, vanilla sugar, egg yolk and lemon well, stir in the flour. Whip the egg whites with the sugar, but do not overbeat, and fold into the sour cream mixture. Heat butter in a frying pan, pour quantity into the hot butter pan, bake briefly on the kitchen stove, then continue baking in the oven at 170 °C until the top is golden brown. According to experience, this takes about 10 min.
Remove the core from the apple, cut into small cubes.
Remove from the oven, sprinkle with sugar and turn to the other side.
Bake again briefly on the stove until the sugar caramelizes. Tear the Schmarren with two forks, fold in apple cubes and coarsely chopped walnuts.
Arrange on a platter, sprinkle with powdered sugar.
