Instructions:

For the Savur anchovies, first clean the anchovies.

To do this, remove the heads and scales. Salt them, turn them in flour and fry them on a little oil. Put them on kitchen paper to drain the remaining fat.

Put some olive oil in a pan and fry onion until yellow. Add salt, peppercorns, rosemary and bay leaves.

Add raisins if desired. Prepare the “savur” from all the ingredients. Place the baked anchovies in a bowl and pour the savur over them and let them infuse.

Serve Savur anchovies cold.
