Instructions:

For the rice dumplings, boil the rice in a saucepan with double the amount of salted water. After boiling, add the milk and cook the rice. Be careful the rice tends to stick to the bottom very quickly.

Slightly overcooled, add salt and pepper, butter as well. Leave to cool. Beat eggs and yolks until foamy and add to cooled rice. Add grated cheese, finely chopped ham, the breadcrumbs, chives.

Season with salt, pepper and chili. Form dumplings from this mixture. Whisk egg and milk and turn the dumplings in it, finally in breadcrumbs.

Fry in a deep fryer at 180 degrees until golden brown.
