For the ratatouille, chop the onion into small cubes. Wash and coarsely dice the melanzani, peppers, tomatoes and zucchini. Finely chop oregano (or/and) basil Heat oil in a pan.
Fry onion in it until golden brown. Add zucchini and bell bell pepper and sauté for about 5 minutes. Add the melanzani and fry for another 5 minutes.
Add the tomatoes and sauté on low heat for about 10 minutes until soft. Season the ratatouille with salt, pepper and spices.
