Season the rabbit fillets with salt and pepper. The remaining ingredients of the marinade in a sauté form and boil briefly. Pour the hot marinade over the seasoned rabbit fillets, place in a jar and refrigerate for at least two days. Halve the grapes, rinse and pluck the tarragon and add to the grapes. Mix with the rabbit marinade and arrange on young cut lettuce. (The olive oil gets a little too firm in the refrigerator, so put it all out together early enough, or if necessary, warm the marinade slightly). Fresh white bread and a glass of Traminer are a hit with this.
