Quarter the pears, core them and remove the skin as you like. Immediately sprinkle with juice of one lemon to prevent them from turning brown. Add oil, salt and pepper. Divide the arugula evenly on plates. Arrange the pears on top. Grate the pecorino directly on top. Serve immediately.
