Naked Cake with Mascarpone Cream and Fruits

Instructions:

For the Naked Cake, preheat the oven to 170 °C top/bottom heat. Beat eggs, sugar, vanilla and salt until white creamy. Add oil and water. Mix flour, cocoa powder, starch and baking powder and sift in.

Pour the batter into three 20 springform pans and bake for about 20 minutes. Then cover and place in the refrigerator for about 30 minutes. Whip the cream with cream stiffener and refrigerate.

In the meantime, mix the mascarpone with 4 teaspoons of cream stiffener, powdered sugar and vanilla sugar. Then fold in the whipped cream. Spread the first cake layer with the mascarpone cream and decorate with the fruit.

Then carefully place the second base on top and also spread with cream and place the fruit on top. Now place the third base on top.

Then place in the refrigerator and make sure that nothing slips. Carefully bring the whipped cream to the boil. Remove from the heat and stir in the chocolate. Let it cool down as well.

Spread the slightly cooled ganache on the cake, it may run down the edge a little. Top with fruit and place the cake back in the refrigerator.
