Cut the hand cheese into cubes. Pour into a stainless steel bowl with the Riesling. Melt in a water bath, stirring heartily.

Mix the eggs and stir into the cheese mixture with a whisk.

Stir in whipped cream and caraway seeds. Melt the butter, stirring gradually with the quantity.

Spread the cooked cheese in a mold and set in the refrigerator for one night. Arrange just before serving: To do this, loosen the cheese from the edge of the mold, dip the mold in warm water, invert onto a platter and remove.

Rinse and clean the radishes and cut them into slices. Cut the chives into rolls. Garnish the cheese with them and bring to the table. Serve with country bread.

Our tip: Always use fresh chives if possible!
