For the lentil salad with peppers and carrots, soak the lentils in water and let stand for a few hours. Then boil in a pot of water until soft and strain.

Finely dice the carrots, also boil until soft and strain. Marinate the lentils with salt and vinegar. Leave to cool.

Peel and finely chop the onion, dice the bell bell pepper. Add both with the carrots over the lentils and dress with oil (e.g. pumpkin seed oil). Season the lentil salad with pepper and salt.
