1. the filling: stir all the ingredients together, bring to a boil, spread through a sieve and cool.
2. the short pastry: put everything in a large enough bowl and knead well together. Bake for about 15 to 20 minutes at 170 °C.
3. decoration: cool the lemon mixture, put it in a piping bag and fill the tartlets with it. Decorate with fresh seasonal fruit and small lemon balm leaves.
