Wash the cut meat, you drain it and sprinkle with juice of one lemon. Peel the potatoes and cut them in half. Between the two potato halves put a little bit of salt, a bay spice and a piece of meat. all together wrap in a lightly buttered greaseproof paper. This is wrapped with aluminum foil. Then comes a thick layer of newspaper and finally the ball is surrounded with aluminum foil.

When all the pieces of meat and potatoes are wrapped, they are placed in the oven heated to the highest temperature. Turn on the heat to 200 degrees and leave the kleftiko in it for about 2 hours. (Krinos puts the balls into the very hot bread oven, closes it airtight with clay and lets the kleftiko cook for 2 hours as well). Then the balls are taken out, unwrapped and meat and potatoes are served separately in baking bowls.

Leaf salad is served with it.
