Peel and core the pears and cut them into slices or cubes. Put them in a saucepan, cover with wine, add 100 grams of honey. Season lightly with salt and season with pepper. Simmer for 15 minutes on low heat. Then pour off the liquid. Mix the eggs in a baking bowl. Gently melt 200 grams of honey in a small pot. Add the eggs, pears and 4 tablespoons of olive oil and mix well. Lightly oil a large ovenproof dish. Pour in the pear mixture and smooth it out. The filling should offer no higher than 2 to 3 cm. Cook the honey pears in the stove heated to 200 degrees for 30 to 40 min until the mixture has firmed up and the surface is golden brown. Sprinkle lightly with pepper and pour the remaining, slightly heated honey over the top. Note: This dessert dates back to Roman times. Nowadays, this dessert is often prepared without pepper, but the Mediterranean flavor of the recipe is lost.
