For the fish soup with glass noodles, soak the glass noodles in warm water. Cut the polar cod into cubes and marinate with lemon juice, soy sauce and grated ginger.
Cut the white part of the young onion into coarse pieces and sauté in the oil until translucent. Pour in the soup. Coarsely grate the carrot and add to the boiling soup along with the spinach. Cook for 3 minutes.
Add the fish with the marinade and cook for another 3 minutes. Turn off the heat. Cut the glass noodles into thirds with scissors, drain the water and add to the soup together with the sambal olek. Taste. Cut the green part of the young onion into fine rings and sprinkle over the fish soup with glass noodles.
