For the veal fillet on wild garlic runner beans, chop wild garlic and puree with a little oil in a stand mixer. Chop onion, carrot and green beans.

Season the veal fillet with salt and pepper, fry in hot oil on both sides and place in a baking dish. Preheat oven to 180 degrees.

In the roasting juice, fry onion, carrot and green beans a little, add pureed wild garlic and mix well again.

Add the vegetables to the veal fillet, pour on some vegetable soup and let it stew in the oven, covered, for about half an hour.

Skim off the excess oil and serve.
