Dough: Put all the ingredients (except the dark chocolate coating) in a suitable bowl, knead well and rest in the refrigerator for an hour.

Weigh the dough and divide it into five pieces. Roll out five bases (diameter 28 cm). Bake the bases for 15-20 minutes at 180 °C in a heated oven. This works best on two baking sheets on top of each other in a convection oven. Cut one cake layer into 14-16 pieces while still warm and brush with the melted cooking chocolate.

Filling / assembling the cake: whip the whipped cream plus the cream stiffener and then carefully add the juice of the lemons. Spread whipped cream on the first three layers and place on top of each other. Decorate the edges of each cake with small dabs of cream from the piping bag. This creates a beautiful cake edge when the bases are placed on top of each other. Decorate the fourth cake layer with cream waves. Fan the individual pieces of the last cake layer.

The cake should be prepared the day before eating and put to cool, so that the floors are no longer too hard.
