Boil chestnuts with bay leaf spice in a little water, peel and crush. Sauté finely chopped onion and garlic in a little butter, add salt, fennel, mushroom slices, cayenne pepper, mix with chestnuts, add nuts and work with breadcrumbs until smooth. Bake in a round dish for about 1 hour at 200 °C. Bring to the table cold.
