2 tbsp. Thin liquid bee honey Yield: For the marinade, 1 tbsp. tbsp. rice wine or semi-dry sherry.
As a main meal plenty for 4, with 4 more dishes for 8 people. Cut the piece of meat into 4 strips. Do not cut off the fat, it will be crispy during roasting and tastes delicious.
Cut the strips 3-4 times in a zigzag pattern, but only score them three-quarters deep so that the strips stay in one piece. This helps the marinade penetrate better and gives the pieces that typical char siu appearance.
Marinate: Mix wine, sauces, sugar and salt, mix the meat thoroughly with it and let it stand for 4 hours. Turn every half hour to the other side.
Put the strips on a grill rack. Roast in the heated oven in the upper third at 190 °C for 25-30 minutes.
Place a drip tray with a good 1 cm of water underneath; the steam that forms also prevents the meat from drying out. Brush the pieces all around with the marinade previously drained in the baking dish, turn to the other side and now grill the other side at 180 °C for 25-30 min.
Remove the grill with the meat and brush with honey on the spot. Cut into slices and bring to the table.
