For candied ginger, peel the ginger bulb and cut into cubes or slices as desired. Bring the ginger pieces to a boil in water, lemon juice and 1/2 cup sugar and simmer for about 20 minutes.

Let cool and roll in remaining cup of sugar. Place on a baking tray lined with baking paper in the oven and dry at 70 °C for 50 minutes.
