Rinse tomatoes, remove stalks from wedges. Peel garlic, toast bread in toaster until golden brown and grate with one clove of garlic. Chop remaining garlic. Drizzle each slice of bread with 1 tbsp oil. Cut tomatoes into thick slices and arrange on bread slices in a fan shape. Season tomatoes with salt and pepper and sprinkle with garlic. Grate Parmesan on top. Drizzle bread with remaining olive oil. Before serving, sprinkle with chopped basil and surround with olives.
