To make the salsify casserole, cook the green spelt in the boiling soup until tender and then strain.
Meanwhile, peel salsify in a bowl of water with a generous splash of vinegar and chop diagonally into bite-sized pieces. Blanch in boiling hot salted water for about 5 min and drain.
Cut bacon into cubes and sauté briefly. Mix milk and eggs and season with salt, pepper and grated nutmeg.
Mix all the prepared ingredients, pour into a greased baking dish and sprinkle with grated cheese.
Bake in a heated oven at 200 °C for about 40 minutes.
Rinse the chives, cut into fine rolls and sprinkle over the black salsify casserole.
