For the beef tagliata, first cut the meat crosswise into slices about 1 cm thick, cut the fennel in half lengthwise, cut out the stalk. Cut fennel into thin slices, drain tomatoes and cut into small pieces.

Season meat with salt and pepper and sear in oil on both sides, remove and set aside, covered. Sauté the fennel in the cooking residue, add the tomatoes, cook briefly and pour on the pure sauce. Sauté the fennel until tender, mix with the tartar sauce and add the thyme.

Serve the beef tagliata with fennel and thyme.
