Instructions:

For the Basque Country cake, separate the eggs. Beat the egg yolks in a bowl with the icing sugar and vanilla sugar until foamy. Add grated orange zest and a little orange juice and mix in the grated almonds.

Beat egg whites with a little cornstarch and a pinch of salt until stiff. Fold into the yolk mixture. Butter a suitable cake or pie pan and sprinkle with breadcrumbs. Pour in the mixture and bake in a preheated oven at 180° for 50-60 minutes. Lift out and let cool.

Meanwhile, for the cream, cream the butter with sugar until fluffy. Add melted chocolate as well as the egg to taste and mix everything well until fluffy. Cut the cooled Baskenland cake once in half crosswise (or bake in 2 thinner pastry sheets if baking time is shorter), fill with the cream and reassemble. Spread the top with orange marmalade and sprinkle the Basque Country cake thickly with powdered sugar.
