Heat bee honey, sugar (1) and water (1) together until sugar is completely dissolved. Cool. Add flour to the honey/sugar mixture form.
Beat eggs and sugar (2)together until creamy. Add gingerbread spice. Dissolve the salt in the milk. Dissolve potash in water (2). Add both raising agents to the remaining ingredients. Prepare everything to a medium dough. Let the dough rest for one day.
Knead well before further processing. Roll out the dough to a thickness of 4 to 6 mm, cut out the desired shape. Place on well-greased and floured baking sheets, brush with milk and bake at 190 degrees. While gingerbread is still hot, brush with gum arabic solution. Garnish to taste.
Gingerbread spice: Grind and mix all spices.
Tip: Cook only with high quality spices – they are the be-all and end-all in a good dish!
