A great cake recipe for any occasion:

Remove peel from carrots and grate very finely. Beat the yolks with 100 g sugar until thick and creamy. Whip the egg whites with the salt and the remaining sugar (add a little at a time!) until stiff. Fold half of the egg whites into the egg yolks.

Fold orange zest, flour, hazelnuts, breadcrumbs, cinnamon powder and rum into this egg mixture. Later, fold in the remaining egg whites.

Line soufflé dishes or small springform pans with butter and breadcrumbs. Pour in the mixture and bake in the oven at 160 CGrad for approx.

30 min. bake. Spread with apricot jam, previously warmed and strained, and cool. Cover with sugar glaze.

For garnish, fillet oranges and collect juice. Peel and blanch the mini carrots. Bind orange juice with pectin and add carrots and orange fillets.

Serve with yogurt ice cream and fresh mint.
