For the spring onion spread with goat cheese, pluck the basil from the stems and chop. Place in a mortar with the chopped garlic clove and Parmesan and grind to a paste (you can also puree the ingredients in a food processor). Stir the olive oil into the pesto.
Finely chop the scallions, using the greens as well. Mix all ingredients in a bowl and season with salt, pepper and a squeeze of lemon juice.
