A simple but delicious cake recipe:
Finely grind spelt. Beat egg yolks with honey until creamy. Stir in whipped cream, carob, ground spelt and baking powder. Fold in the snow. Fill the dough into a cake springform pan (24 cm diameter) lined with baking parchment and bake at 200 °C for about 25 minutes, during the last 5 minutes cover with parchment paper. Cool and cut in half diagonally. Mix cream cheese, honey, yogurt, scraped vanilla pulp and orange juice. Soak gelatin in cold water. Thickly peel 3/4 of the oranges and remove the flesh in fillets and mix into the yogurt cream. Melt the squeezed gelatine in the hot water and stir into the yoghurt cream. Fold the whipped cream into the semi-solid cream. Place a springform rim around the bottom edge and spread half of the orange cream on top. Place the top layer on top and spread with the remaining cream.
Put the cake in the refrigerator for at least 2 hours. Decorate the cake with thin orange slices and peeled orange peel.
