Instructions:

For the almond cookies, first spread Fini’s Feinstes wheat flour smoothly on a work surface and make a well in the center. Add honey, yolks, salt, vanilla sugar, lemon zest, almonds and cold butter cut into small pieces and quickly knead all ingredients from the center to a smooth dough. Let rest in the refrigerator for about 2 hours. Then roll out the dough on a floured work surface to the thickness of the back of a knife and cut out discs. Place the cookies on a baking tray lined with baking paper, brush with beaten egg white and sprinkle with flaked almonds. Place the baking tray in the middle of the preheated oven and bake at 190 °C for approx. 8-10 minutes. After cooling, assemble the almond cookies with raspberry jam.
