Crumble yeast into a mug, add sugar and a little flour, pour milk and let rise. Mix egg yolks and salt in lukewarm fat and milk and add to the baking bowl with flour, lemon zest and sugar. Pour the yeast and prepare the dough, cover the bowl with the dough and let it rise.

Roll out the risen dough to a thickness of about 0.5 cm and cut out small cakes with a cup dipped in flour. Place them on a greased baking tray and let them rise for a while. Brush with beaten egg, pierce with a fork all over the surface and place in the preheated oven. Bake for about 20 minutes until golden brown. Brush with honey if desired.
