For the tartar sauce, finely chop the pickles and capers. Pour the soy milk, oil and lemon juice into a blender jug. Blend with a hand blender until a creamy consistency is reached (about 30 seconds).

Mix the cream with the pickles, capers, mustard, parsley, sugar and pepper. Season to taste with salt and sugar. Tartar sauce goes well with baked mushrooms.
