For the Williamskonfekt, finely dice the pears, boil with water for 5 minutes, add 3 tablespoons of pear brandy and vanilla sugar and stir to a paste.

Bring the cream to the boil, dissolve the chocolate and coconut fat in it in a bain-marie, remove from the heat and stir in 3 tablespoons of pear brandy.

Allow the mixture to cool until it is ready for piping, stirring occasionally. Using a piping bag, pipe some of the confectionery mixture onto the bottom of small paper cuffs, pipe some of the pear paste on top and finally pipe more of the confectionery mixture on top.

Chill.
