For the spinach pasta tart, first knead all the ingredients for the dough. Form into a ball, wrap in plastic wrap and refrigerate for at least an hour.
In the meantime, cook the pasta in enough salted water until al dente, drain and rinse.
Peel and finely chop the garlic and shallots. Sauté in a little olive oil. Add the washed spinach and season with the spices.
For the glaze, grate the cheese. Melt the butter and stir in the flour. Then add the milk. Stir in the cheese and season with salt, pepper and nutmeg.
Grease a tart pan. Roll out the dough slightly larger than the pan and place it inside. Prick it often with a fork and bake blind at 180 °C for about 10 minutes.
Put the spinach on the bottom of the tart. Roll out the macaroni over it from the inside to the outside. Spread the glaze evenly over the spinach pasta tart. Place in the oven again for about half an hour.
